Breakfast Recipes
Mandazi (Swahili)
Ingredients:
2 cups all-purpose flour
1/2 cup sugar
1/2 cup coconut milk
1/4 tsp cardamom powder
1/4 tsp baking powder
Oil for frying
Instructions:
In a bowl, mix flour, sugar, cardamom, and baking powder.
Gradually add coconut milk and knead into a soft dough.
Cover and let rest for 30 minutes.
Roll out the dough and cut into triangles or desired shapes.
Heat oil in a pan and fry the mandazi until golden brown on both sides.
Serve warm with tea or coffee.
Mahamri (Swahili)
Ingredients:
2 cups all-purpose flour
1/2 cup sugar
1/2 cup coconut milk
1/4 tsp cardamom powder
1/4 tsp yeast
Oil for frying
Instructions:
In a bowl, mix flour, sugar, cardamom, and yeast.
Gradually add coconut milk and knead into a soft dough.
Cover and let rise for 1 hour.
Roll out the dough and cut into circles.
Heat oil in a pan and fry the mahamri until golden brown on both sides.
Serve warm with tea or coffee.
Uji (Porridge) (Kikuyu)
Ingredients:
1/2 cup millet flour
1/2 cup sorghum flour
4 cups water
1/2 cup milk
Sugar to taste
Instructions:
Mix millet flour and sorghum flour with a little water to form a smooth paste.
Bring the remaining water to a boil in a pot.
Gradually add the flour paste, stirring continuously to avoid lumps.
Simmer for 10-15 minutes, stirring occasionally.
Add milk and sugar, and cook for another 5 minutes.
Serve warm.
Chapati (Indian Influence)
Ingredients:
2 cups all-purpose flour
1/2 tsp salt
1 tbsp oil
3/4 cup water
Extra oil for frying
Instructions:
Mix flour and salt in a bowl. Add oil and water, and knead into a soft dough.
Cover and let rest for 30 minutes.
Divide the dough into small balls and roll each into a thin circle.
Heat a skillet and cook each chapati, brushing with oil and flipping until golden brown on both sides.
Serve warm with your favorite stew.
Viazi Vitamu (Sweet Potatoes) (Luhya)
Ingredients:
4 sweet potatoes, peeled and sliced
Water for boiling
Salt to taste
Instructions:
Boil the sweet potatoes in salted water until tender.
Drain and serve warm with tea or coffee.
Matoke (Plantains) (Kisii)
Ingredients:
4 green plantains, peeled and sliced
1 onion, chopped
2 tomatoes, chopped
1 green bell pepper, chopped
2 tbsp oil
Salt to taste
Instructions:
Heat oil in a pan and sauté the onions until translucent.
Add the tomatoes and bell pepper, and cook until softened.
Stir in the plantains and cook until tender.
Season with salt and serve warm.
Nduma (Arrowroots) (Kamba)
Ingredients:
4 arrowroots, peeled and sliced
Water for boiling
Salt to taste
Instructions:
Boil the arrowroots in salted water until tender.
Drain and serve warm with tea or coffee.
Mkate wa Sinia (Swahili)
Ingredients:
2 cups all-purpose flour
1/2 cup sugar
1/2 cup coconut milk
1/4 tsp cardamom powder
1/4 tsp yeast

Mkate wa Ufuta (Sesame Bread) (Swahili)
Ingredients:

1/2 cup sugar
1/2 cup coconut milk
1/4 tsp cardamom powder
1/4 tsp yeast
1/4 cup sesame seeds
Oil for frying
Instructions:
In a bowl, mix flour, sugar, cardamom, and yeast.
Gradually add coconut milk and knead into a soft dough.
Cover and let rise for 1 hour.
Roll out the dough and cut into circles.
Sprinkle sesame seeds on top and press lightly.
Heat oil in a pan and fry the mkate wa ufuta until golden brown on both sides.
Serve warm with tea or coffee.
Mkate wa Tambi (Pasta Bread) (Swahili)
Ingredients:
2 cups all-purpose flour
1/2 cup sugar
1/2 cup coconut milk
1/4 tsp cardamom powder
1/4 tsp yeast
1/4 cup cooked pasta
Oil for frying
Instructions:
In a bowl, mix flour, sugar, cardamom, and yeast.
Gradually add coconut milk and knead into a soft dough.
Cover and let rise for 1 hour.
Roll out the dough and cut into circles.
Add cooked pasta to the dough and mix well.
Heat oil in a pan and fry the mkate wa tambi until golden brown on both sides.
Serve warm with tea or coffee.
Mkate wa Mofa (Oven Bread) (Swahili)
